Educated at the prestigious culinary institutions CEPROC and EPMTTH in Paris, Salomon immersed himself in the traditions of artisan bread and classic pâtisserie — learning that excellence is born from precision, respect for ingredients, and relentless attention to detail.

He mastered the timeless techniques that have made French baking revered around the world, understanding that every lamination, every proof, every score carries the weight of centuries of tradition.

New York City &

Maison Kayser

Driven by a lifelong dream of living in the United States, Salomon crossed the Atlantic to pursue his craft in New York City, where he joined the celebrated French bakery Maison Kayser.

There, in one of the most demanding bakery environments in the world, he refined his techniques and deepened his appreciation for the discipline and rhythm of artisan baking at the highest level.

Miami & the

Spirit of Possibility

His journey led him to Miami, where he joined the renowned bakery Zak the Baker. From the moment he arrived, Salomon felt an immediate connection with the city — the tropical light, the vibrant cultural mosaic, and the spirit of possibility that defines Miami.

Miami created an energy that felt almost like living in a perpetual summer. He had found his home.

Chapter Four

The Test
He Chose to Fight

During the pandemic, a devastating car accident left Salomon between life and death. Doctors warned him that his injuries could permanently prevent him from returning to the physically demanding world of baking.

Unable to walk and facing an uncertain future, he was repatriated to France in a wheelchair, carrying with him the crushing fear that the passion defining his life might be lost forever.

"But for Salomon, giving up was never an option."

With the unwavering support of his loved ones, a deep faith, and a determination stronger than any obstacle, he committed himself to a long and demanding rehabilitation. Step by step, day after day, he fought to rebuild his strength — driven by one simple promise: he would return to the oven.
