Our Hummus Tehina is a revelation of texture. Moving far beyond the ordinary, our chickpeas are triple-cooked and passed through a fine sieve to achieve a cloud-like, velvet consistency. We blend this with an exceptionally high ratio of premium stone-ground Ethiopian tehina, resulting in a rich, nutty profile balanced by a bright finish of fresh lemon juice and a hint of roasted garlic.
The dish is elevated with a warm topping of sautéed wild mushrooms—a blend of King Oyster and Shiitake—seared in cold-pressed olive oil with fresh thyme and cracked black pepper. To complete the experience, we serve it with a freshly baked, hand-braided Challah Bread. Our Challah is enriched with honey and extra egg yolks, providing a pillowy, slightly sweet crumb that is the ultimate vessel for scooping the warm, savory hummus.
