At the House of Salomon, we treat the Doppio as a technical achievement in extraction—balancing acidity, sweetness, and body into a singular, liquid gold.
Using 18–20 grams of our signature House Blend, we pull a double shot through a bottomless portafilter to ensure a thick, elastic mahogany crema that traps the volatile aromatic oils. This process reveals a rich layering of flavors: starting with a bright, wine-like acidity, moving into a heart of roasted hazelnut and dark caramel, and lingering with a persistent, bittersweet cocoa finish. It is a bold, uncompromising cup, served in a minimalist ceramic demitasse to maintain the ideal temperature for tasting.
