Our Flan Pâtissier is a tribute to the golden age of French baking. It is a dessert of delightful contrasts—starting with a sturdy, slightly salty Pâte Brisée (shortcrust pastry) that provides a crisp, structural snap against the luscious, wobbly heart of the tart.
The custard itself is a masterpiece of patience. We infuse whole farm milk and heavy cream with an abundance of Madagascar Bourbon vanilla beans, slow-cooking the mixture until it reaches a dense, silky consistency.
