The Millefeuille Entremets takes the traditional “thousand-leaf” concept and elevates it into a refined, multi-layered dessert. At the House of Salomon, we emphasize the contrast between the deep, bittersweet notes of caramelized puff pastry and the ethereal lightness of our signature creams.
Unlike the rustic charm of a standard Napoleon, our Entremets version features invert-laminated puff pastry, which is pressed during baking to create thin, intensely crunchy layers with a glass-like caramel finish. These sheets are layered with a high-stability Vanilla Bean Diplomat Cream—a luxurious fusion of pastry cream and whipped Chantilly. For a modern twist, we incorporate a hidden core of creamy salted caramel, adding a surprising depth of flavor.
