The foundation is our signature Pâte Sucrée—a sweet, buttery shortcrust pastry that is blind-baked until it achieves a crisp, biscuit-like snap. This golden shell is then filled with a house-made Lemon Curd, slow-cooked with fresh-squeezed lemon juice, zest, and free-range egg yolks to achieve a dense, custard-like consistency. To finish, each tart is topped with a delicate lemon zest confit or a singular fresh mint leaf, highlighting its vibrant, natural flavors.
